The different ways to wok A. The chao method, stir frying with Demeyere Woks When stir-frying with Demeyere Woks, the vegetables, meat, etc. must first be cut into fine strips. Everything must be prepared in advance because the cooking time is very short. Heat up the Demeyere wok and pour in a few tablespoons of vegetable oil. Groundnut oil is certainly one of the best oils to use, but you can of course use any other deep-frying oil. When the oil is nice and hot (but not yet smoking), first halve the heat intensity of the cooker. Place the ingredients in the Demeyere wok, in decreasing order of hardness, stir and turn the content continuously for 5 minutes or so, until everything is nice and crispy. So that the vegetables are done on the outside but crispy on the inside. This cooking method is very healthy because the vitamins are preserved and very little oil is used. B. Steaming with the Demeyere Wok Steaming is a very common practice in the Chinese kitchen (e.g. for dim sums). This cooking method is now being applied more and more when preparing western dishes. The Demeyere Woks are excellent for that purpose. The Demeyere wok (ref. 2932E) has a semi-circular grid (ref. 9901) that is suitable for steaming small quantities but also practical when deep-frying tempura, etc. The delivered Demeyere lid (ref. 7532) may be used with the semi-circular grid. A completely round Demeyere steaming grid (ref. 9906) may be purchased separately. Any heat-resistant dish can be used in the Demeyere wok to steam on this grid. For all other Demeyere woks of 32 and some of 36 cm identical accessories may be purchased separately, if necessary adjusted to the diameter. C. Deep-frying with the Demeyere Wok The Demeyere wok is also ideal for deep-frying small quantities of food: fish, meat, croquettes. The Demeyere semi-circular grid (ref. 9901 for 32 cm Demeyere woks or ref. 9909 for 36 cm Demeyere woks) is ideal for draining e.g. tempura. D. Frying with the Demeyere Wok Because of its shape, size and the material it is made of, the Demeyere wok is also suitable to fry meat and even prepare a roast. E. Boiling with the Demeyere Wok The Demeyere wok is also excellent for “normal” cooking. Asian people regularly the Demeyere wok to prepare soups.
