An electric resistance is heated up in a coil or under a steel plate. That heat is then transferred to the bottom of the pot by contact or radiation. In general it is much safer and cleaner than gas but slower to react when changing the intensity of the heat because it is less direct. The quality and especially the bottom are more important than with gas.
