| Ingredients that are very sensitive to temperature and may not be boiled because they could loose their binding properties, should be prepared “au bain marie”. Examples are: making sabayon, heating up certain delicate sauces and melting chocolate. Make sure you stir continuously during heating. This gives the best results. This product may also be used as a high lid or a dish and can be covered with the lids of the pots/pans. |
